Ingredients: 1 1/2 cup sugar 1/2 cup butter or margarine, softened 1/2 cup shortening (or just use more butter) 1 1/2 tsp. baking powder 1 tsp. vanilla 1 tsp. almond extract 4 eggs 3 cups flour 1 can fruit pie filling glaze (below)

Directions:Preheat oven to 350 degrees. Grease 9x13 pan.
Blend sugar, butter, shortening, baking powder and vanilla, almond extract and eggs in large bowl on low speed, scraping bowl constantly.
Beat 3 minutes on high and then stir in flour.
Spread 2/3 of the batter in the pan and then spread pie filling over the batter.
Drop remaining batter by tablespoons onto pie filling.
Bake about 45 min.
While warm drizzle with glaze made of 1 cup powdered sugar and 2 or 3 tablespoons of milk. |

This is definitely a family favorite and we make it often. I usually add more on the vanilla and almond extract - maybe double. I've always used 1 cup of butter and have never tried it with shortening or margarine. You can use any kind of pie filling but blueberry is our family favorite. Keeps for several days (if it lasts that long) sitting on the counter.
I usually use the following cooked glaze instead of the one listed in the recipe:
Cooked Glaze: 1/2 cup butter melted in a sauce pan Add 1/2 cup sugar & 1/4 cup milk to the melted butter; bring to boil and boil for 3-5 minutes. Remove from heat and add 1-3 teaspoons of vanilla and 1 teaspoon of almond extract. Pour over warm coffee cake; glaze will set up as it cools but okay to eat right away.
