Ingredients:
6 c. Flour
3 tsp. Baking Powder
1 tsp. Salt
1 lb. Morelle Lard
1 1/2 c. white sugar
2 room temperature eggs
1/2 c. orange juice or brandy (we prefer OJ)
1/2 tsp. vanilla
2 tbsp Anise
Cinnamon (to taste)
White Sugar

Directions:
Directions:
Preheat oven to 350°F (175°C).

Sift dry ingredients
Sift the flour, baking powder, and sugar together three times. Set aside.

Cream the lard
In a mixer, cream the lard until light and fluffy.

Add wet ingredients
Add the white sugar, eggs, orange juice, vanilla, and anise to the lard. Mix until well combined.

Combine wet and dry
Slowly add the dry ingredients to the wet mixture while mixing. The dough will begin to ball up.

Knead the dough
Remove from the mixer. Lightly flour your work surface and gently knead the dough into a smooth ball.

Optional: Chill the dough in the refrigerator for 10–15 minutes.

Roll and cut
On a floured surface, roll out the dough with a rolling pin. Use cookie cutters to cut into shapes.

Bake
Line cookie sheets with parchment paper. Place cookies on the cookie sheets and bake for 10–15 minutes (depending on the size of cookie) until the edges are very lightly browned.

Prepare cinnamon sugar
While the cookies bake, mix cinnamon and sugar together. Add as much cinnamon as you prefer.

Dredge cookies
Remove cookies from the oven and let them rest for 1–2 minutes. Dredge in cinnamon sugar and place on a cooling rack. Tip: Place newspaper under your cooling racks to save on cleanup time!

Enjoy with coffee, tea, or on their own!
