Ingredients: 3 c. Flour (All purpose) 2 tbsp. Baking powder 2 tbsp. Sugar 1 tsp Salt 3/4 c. Butter ( well chilled and grated or cubed in small cubes) 1 tbsp. Bacon grease (optional) 1 1/4 c. Butter milk

Directions:Preheat oven to 425º Butter your pan (10" round cake pan or a cast iron skillet. In a medium size bowl, shift or wisk together the Flour, Baking powder, Sugar and Salt. Using your hands or a pastry cutter, cut in your grated, chilled butter until well combined. Mixture will be grainy but consistent in texture. Now cut in your Bacon grease. Fold in the Buttermilk. With floured hands knead the dough into a smooth ball. (This dough should be moist but not stick to your hands.) Divide dough into 8 even pieces by pinching it apart then forming them into a rough biscuit shape. Place in your prepared pan. Bake approximately 30 minutes or until lightly golden brown. |

Notes: I find I like to bake these best in my cast iron skillet.
If you dough is too sticky when at the ball stage knead in a little all-purpose Flour 1 tsp. at a time until right. If it is too dry, knead in a little Buttermilk 1/2 -1 tsp at a time until right.
The Bacon grease is optional but I really like the little flavor kick it adds.
Can also knead in 1/2 cup of finely shredded Cheddar cheese into your dough then brush with melted Garlic Butter immediately after cooking for a Cheddar bay style biscuit.
For a lighter biscuit you can substitute half the all purpose Flour with Cake Flour.
