½ cup shortening
½ cup sugar
1 egg
1 cup black molasses
1 teaspoon lemon juice
3½ cups sifted flour
1 teaspoon cinnamon
¾ teaspoon ground cloves
½ teaspoon ginger
2 teaspoons baking soda
½ teaspoon salt
⅔ cup boiling water

Directions:
Directions:
Cream shortening and sugar together; beat in egg.
Add molasses and lemon juice; blend well.
Sift together dry ingredients and add to the creamed mixture.
Add boiling water; mix well.
Chill dough thoroughly (overnight preferred).
Drop by teaspoonfuls onto greased cookie sheets.
Sprinkle tops with sugar.
Bake at 350°F for 8–10 minutes.

Dough may also be rolled out on a floured board instead of dropped from a spoon; this makes a nicer cookie.
