Ingredients:

3 eggs
1 3/4 cups sugar (or 2 if you like it sweeter)
1 cup oil
2 cups shredded zucchini (take seeds out)
3 teaspoons vanilla
3 cups flour
1 1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup chopped walnuts

Directions:
Directions:
Beat eggs in bowl. Add sugar, oil, & vanilla. Add dry ingredients, Add zucchini and nuts. Mix well. Place in 2 greased pans or 1 tube pan (9x5x3 loaf pans). Bake at 325 for 1 hour for loaf pans or 350 for 1 hour for tube pan.
