2 c. all-purpose flour
½ c. granulated sugar substitute (I use Swerve)
1 tsp. baking powder
¼ tsp. salt
½ c. unsalted butter, softened
1 T. lemon zest
2 T. fresh lemon juice
1 tsp. vanilla extract
1 egg

Lemon Glaze:
1 c. powdered sugar substitute (Swerve)
2 - 3 T. lemon juice
1 tsp. lemon zest

Directions:
Directions:
Preheat oven to 350º. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, sugar substitute, baking powder and salt. In a separate bowl, cream butter until smooth. Mix in lemon zest, lemon juice, vanilla and egg. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms. Scoop tablespoon-sized portions onto prepared baking sheet and gently flatten. Bake for 10 to 12 minutes, until set lightly golden on the bottom. Allow cookies to cool before adding the lemon glaze. Whisk the lemon juice and zest with the powdered sugar substitute, using a spoon to drizzle over each cookie.
