1 lb mild chicken Italian sausage
1/4 lb prosciutto or cooked ham
4 T margarine
1/2 c chopped fresh parsley
3 eggs, well-beaten
1/2 c grated Parmesan cheese
Freshly ground black pepper
1/2 lb spaghetti
Salted water
Additional cheese for topping

Directions:
Directions:
Cook spaghetti in large kettle of boiling salted water.
Remove casings from sausage and crumble meat into a wide frying pan with 2 T of margarine. Add half of prosciutto and cook until sausage is lightly browned. about 10 min. Stir in remaining proscuitto.
Drain pasta and add hot meat mixture.
Add remainer of margarine and parsley; mix quickly to blend.
At once, pour in eggs and quickly lift spaghetti to coat well with egg. Sprinkle the 1/2 c cheese and a dash of pepper. Serve with additional Parmesan cheese and hot crusty Italian bread.

This is one of our favorite dishes to serve guests. We put it together in the kitchen and serve it with hot bread and a Caesar salad.
