There's still time to whip up this delicious, unusual dessert for Thanksgiving ,dinner.' It's Pumpkin Roll, an easy-to-make.cake that would be an attractive addition to any holiday get-together.
Jan Evaps of Churchill Circle says you'll love it, and she should know. Her recipe is the weekly winner in the Specialty of the House recipe contest and wins :$5 for Miss Evans.
, The pumpkin goes into the batter which is made just like a jelly roll, except . that the filling is a mixture of cream cheese and powdered sugar.
Pumpkin Roll
3 eggs 1 tsp. cinnamon
1 cup sugar 1 tsp. ginger
2/3 cup pumpkin 1/2 tsp. nutmeg
1 tsp.lemon juice 1/2 tsp. salt
3/4 cup flour 1 tsp. baking powder
Beat eggs 5 minutes at medium speed of mixer. Gradually add sugar. Stir in ,pumpkin and lemon juice. Mix together dry ingredients, then gradually add to pumpkin mIxture. Pour into a 15 x 9 x I-inch greased and floured pan. Sprinkle ;top with 1 cup chopped nuts. Bake 15 minutes at 3500 •
. Turn out onto a terry cloth towel covered with powdered sugar. Immediately :roll up starting at a short end. Let cool, unroll, spread with filling and roll up

. Cream together two 3 oz. pkgs of cream cheese, 1 cup powdered sugar and 4 Tbsp. butter.
