2 cups flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 cup shortening (part butter)
1 cup brown sugar firmly packed
1 cup granulated sugar
2 eggs
1 tsp vanilla
1 cup flaked coconut
1 cup chopped nuts
2 cups one minute rolled oats

Directions:

Preheat oven to 350°. Cream shortening with sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add dry ingredients to creamed mixture, mixing well. Stir in coconut, nuts, and oats until evenly combined. Drop dough by rounded tablespoonfuls onto greased or parchment-lined baking sheets. Bake 10 – 12 minutes, or until lightly golden around the edges. Cool briefly on baking sheet, then remove to wire racks to cool completely.
