Cake:
2 cups sugar
2 cups flour
2 eggs
2 tsp. baking soda
1 can (20 oz.) crushed pineapple, including the juice
1 cup shredded coconut
1 cup chopped walnuts or pecans

Frosting:
1 - 8 oz. package cream cheese, room temperature
1 stick of butter, room temperature
1-1/2 cups powdered sugar
1 tsp. vanilla

Cake:
Combine all cake ingredients in a bowl and mix well. This is a very moist batter. Pour into a buttered 9 x 13 pan. Bake at 350º for 45 minutes.

Frosting:
Cream butter and cream cheese together, add powdered sugar and vanilla and mix well.
