1 large onion, chopped
1/2 cup margarine
2 eggs slightly beaten
1 cup herb seasoned bread stuffing
1/4 tsp pepper
1 cup celery, chopped
4 cups mashed potatoes
1/2 cup chopped parsley
1 tsp salt
1/4 tsp paprika
4 chicken breasts, boned and split

Directions:
Directions:
Saute onion and celery in margarine until tender. Add potatoes. Add other ingredients except paprika.
Arrange breasts on top of stuffing in a shallow casserole dish. Brush chicken with 1/4 cup melted butter. Sprinkle with 1/2 tsp salt, dash of pepper, and 1/4 tsp paprika

Bake at 375 degrees for 35-40 minutes
