4 eggs, separated
1 tsp grated lemon rind
1 1/2 cup sugar
1/2 tsp salt
1/3 cup lemon juice
1 tbsp melted butter
1/2 cup sifted flour
1 1/2 cups milk
Directions:
Directions:
Beat together egg yolks, lemon juice, rind, and butter in a bowl with rotary beater until thick and lemon colored. Combine sugar, flour, and salt. Add dry ingredients alternately with milk, beating well after each addition. Beat egg whites until stiff. Blend into yolk mixture on low speed of electric mixer. Pour mixture into a 8" square baking dish. Set in pan of hot water.
Bake at 350 degrees for 45 minutes or until golden.
