Ingredients: 2 sticks softened butter 1 c packed light brown sugar 3/4 c sugar 2 large eggs 2 t vanilla 2 cups flour 1 t kosher salt 1 t baking soda 1 1/2 c rolled oats 1 1/2 c semi sweet chocolate chips 1 1/2 c peanut butter chips 1/2 c walnuts (optional)

Directions:Pre heat 350 degrees. line 2 baking sheets with parchment.
In a stand mixer *you need a stand mixer* Cream butter, brn sugar & sugar on med until light & fluffy. Reduce mixer speed & add eggs 1 at a time. Add vanilla & beat until well incorporated.
Whisk flour, salt & soda. Slowly add flour mix to the mixer. Reduce speed & add oats, assorted chips & nuts. Blend to combine.
Using a 2 oz. cookies scoop (med size- not mini, not full size) scoop dough out onto baking sheets. Leave room for BIG cookies. Refrigerate at least 30 min.
Baking in batches & leaving dough in frig. until ready to bake. Set dough balls 3 " apart & bake until browned20-25 min. Repeat baking process. |

Notes: By using the scoop & chilling the dough these turn out like large professionally baked cookies! Theses are similar to Cowboy cookies or Kitchen sink cookies but are totally different cookie.
