1 1/2 cups powdered sugar
1 cup softened butter, creamed
1 tsp vanilla
1/2 tsp almond extract
1 large egg
2 1/2 cups flour - all purpose
1 tsp baking soda
1 tsp cream of tartar

Directions:
Directions:
1. In large bowl, beat 1 1/2 cups powdered sugar, softened butter, vanilla, almond extract & egg with mixer until all ingredients are smooth & thoroughly blended.
2. Stir in flour, baking soda & cream of tartar just until combined. Be careful not to overmix as this results in tough cookies.
3. Divide the dough & shape each half into a long thick flattened disk. Wrap each disk in plastic wrap & refrigerate for at least 2 hours or up to 24 hours. The dough is ready when it feels firm to the touch & no longer sticky.
4. Heat oven to 375°F.
5. Roll disks, one at a time, on a lightly floured surface to 1/4 inch thick. Be careful not to use too much flour as it can make cookies tough.
6. Cut with cookie cutters into desired shapes.
7. Place cookie sheet on the middle oven rack. Bake 7-8 minutes or until edges are light brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely - about 30 minutes.
8. In medium bowl, beat 3 cups powdered sugar, 4 T milk & 1/2 tsp vanilla until smooth & spreadable. If icing is too thick to spread add additional milk, 1 tsp at a time. Tint with food color as desired.
