2/3 c. Sugar
3 1/2 Tbsp. Corn Starch
1/2 tsp. Salt
2 egg yolks
1 1/2 c. water
Juice & grated rind of 1 lemon
2 Tbsp. shortening (Crisco!)
make or buy pie crust

Directions:
Directions:
Stir water into shortening, cook until thick, then before removing from stove add broken yolks, lemon juice, rind and cook for for a few minutes longer than put in pie shell.

To make the meringue topping: Beat egg whites in a glass, metal, or ceramic bowl with an electric mixer until foamy. Gradually add sugar, continuing to beat until stiff peaks form.

quickly add to top of pie, brown in the oven. Bake at 325º for 20-25 minutes
