½ C. Butter, melted
½ C. Brown Sugar
½ White Sugar
½ C. Pumpkin Puree
1 Egg
2 tsp. Vanilla
2 C. Bread Flour
1 tsp. Baking Soda
1 tsp. Cinnamon
½ tsp. Salt
½ tsp. Pumpkin Spice

Frosting:
3 T. Butter
½ C. Brown Sugar
¼ C. Milk
2 C. Powdered Sugar

Cookie:
1. Mix together the sugars and butter, then add pumpkin, egg and vanilla.
2. Add remaining dry ingredients and mix until combined.
3. drop spoonfuls of pumpkin cookie batter onto a non-greased cookie pan.
4. Bake at 350º F for 10-12 minutes.

Frosting:
1. Boil 3 T. of butter and ½ C. brown sugar until mostly smooth.
2. Cool and add ¼ C. milk and 2 C. powdered sugar or until desired consistency and whip with hand mixer until smooth.
3. Spread onto each cookie.
