2 lbs (or more, if needed) chicken wings
Flour
Eggs
Italian bread crumbs
Vegetable oil

Directions:
Directions:
Place flour in a small bowl. In a second bowl, beat 2–3 eggs. In a third bowl, add 1–2 cups Italian bread crumbs.

Add more flour, eggs, and bread crumbs to the bowls as needed until all the wings are coated.

Roll each chicken wing in the flour, then dip it in the beaten eggs, and finally coat it with the bread crumbs.

In a large frying pan, add enough vegetable oil to completely cover the bottom of the pan. The wings should sit in the oil, but the oil should not cover them like a deep fryer.

Heat the oil over medium heat until hot enough for the wings to begin frying when placed in the pan.

Cook the wings until the first side is browned, then turn and brown the other side.

Place cooked wings on paper towels to absorb excess oil.

Refrigerate the wings and serve cold — as is, or with a dipping sauce of your choice.
