2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
Wet Ingredients:
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
3 Tbsp granulated sugar (for rolling)
1/2 cup packed light brown sugar
1 large egg
1/4 cup molasses
2 tsp vanilla extract
Dipping & Decoration:
3 cups white chocolate chips
3 Tbsp shortening

Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
Cream Butter & Sugars: In a stand mixer, cream butter, 1/2 cup sugar, and brown sugar until smooth.
Add Wet Ingredients: Beat in egg, then mix in molasses and vanilla.
Combine & Chill: Gradually mix in dry ingredients until dough just comes together. Cover and chill for 1 hour.
Shape & Roll: Scoop 1.5 tablespoons dough, roll into balls, then coat in remaining sugar. Flatten slightly.
Bake: Bake at 350°F (175°C) for 8–10 minutes. Let cool on the baking sheet, then transfer to a wire rack.
Melt Chocolate: In batches, melt white chocolate chips and shortening together in 10-second intervals, stirring until smooth.
Dip & Decorate: Dip half of each cooled cookie in white chocolate, let set on parchment. Pipe on holly leaves and berries using candy melts or icing. Let set fully before storing.
Rena’s Tip:
Dip and decorate in small batches so the chocolate doesn’t harden too quickly while you work. And don’t worry if your holly leaves aren’t perfect — they’ll still taste like Christmas.
