Crust

6-7 Cups of Flour
2 Eggs
¾ Cup Crisco
Pinch of Salt
Lots of Pepper (4-5 shakes more pepper than salt)

Filling

(All Cold cuts should be cut very thick)
1½ lbs. Genoa Salami
5 lbs. Ricotta
1 Large and 1 small Mozzarella ball
2 lbs. Boiled Ham (lean)
1½-2 pounds Prosciuttini
12 Large eggs
½ Cup Grated cheese
Directions:

Cut all cold Cuts into little chunks the night before.

For the crust, mis Crisco in flour, salt and pepper, beat eggs and add to dry ingredients. Add enough warm water to make dough pliable, knead until not sticky. You may have to add flour, break into 10 parts (5 pies- 2 crusts each)

For filling, Put cold cuts in a pan and add Ricotta
Beat eggs separately and then mix together with ricotta mixture.
Add Grated cheese.
Stir --- Mix well as it is hard to turn --
To moisten, add eggs

Roll out crust.

Pour mixture into crust and cover with another crust.
Flute edges well.
Make 3 slits with knife.
Beat another egg and add. milk and brush it on the top of the top crust.

Bake at 350º for 1 hour, sometimes longer. Leave until it moves away from pan and you can baste with more egg and milk while baking.

It must cool completely.
Vi found better results making individual pies rather than 1-13x9 pan
