Grandma Parsons' Coffee Cake Recipe

1 stick margarine or butter
1 cup sugar
2 eggs
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. almond flavoring
1 cup sour cream
1 6 oz. can whole cranberry sauce
½ cup nuts

Note: for cinnamon coffee cake, substitute ½ cup sugar, 2 Tbsp, melted butter and 2 tsp. cinnamon for cranberry sauce. Use vanilla instead of almond flavoring.

Cream margarine, add sugar, 2 eggs, one at a time. Add flavoring and sour cream. Sift dry ingredients Alternate dry ingredients with sour cream mixture. Use an 8 inch tube pan. Layer of batter, spoon cranberry sauce, add another layer of batter, spoon cranberry sauce, another layer of batter, and cranberry sauce on top. Press nuts on top. Bake at 350º for 50-55 minutes. Test for doneness near the tube. Take out of pan, cool and top with:

¾ cup confectioners sugar
1 Tbsp. hot water
½ tsp. almond flavoring

Note: Use vanilla for cinnamon coffee cake version.

This was one of my mother's staple recipes. I can still picture her explaining the recipe to someone else and gesturing with her hands how to pat the nuts into the top of the batter.
