2 cups Quick Oats
2 cups sugar
2 sticks of butter melted (don't use margarine)
6 tbs. flour
1/2 tsp.salt
1 tsp. vanilla flavoring
2 eggs
1/2 tsp. baking powder

Preheat oven to 325-350 degrees
Mix ingredients in order given
Line cookie sheet with non-stick foil
Drop about 1/8 tsp. of mix on lined cookie sheet about 2" apart
Bake about 5 mins, or until light brown or the cookie has little holes in it.
Cool for about 1 to 2 mins, on foil, remove on to wax paper, When cool move to plastic container.

1. If you use reg, foil spray with cooking spray, non-stick is better.
2. Keep in air-tight container to keep them from becoming soft.
3. Cookies can be stored for several months in refrigerator or frozen longer.
4. Cool mix at least 30 mins, in refrigerator, or freezer, will dip out easier. Cool overnight is better.
5. Can mix in advance and keep covered in refrigerator for several days.
6. Do not have to cook all at the same time. Just refrigerate or freeze and the dough will be fine. If frozen you do not have to thaw, dip out with ice cream scoop.
7. Makes about 200 cookies
