"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1/3 c. – vegetable oil 1½ c. – bananas, mashed & ripe (about 3 large) ½ tsp. – vanilla 3 – eggs 2 & 1/3 c. – Bisquick baking mix 1 c. – sugar ½ c. – chopped nuts
Heat oven to 350º. Generously grease bottom of 9 x 5 x 3 loaf pan. Stir all ingredients in pan with fork until moistened; beat vigorously for 1 minute. Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes. Cool 5 minutes. Run knife or metal spatula around sides of loaf to loosen; remove from pan.
