1 c. – sugar
½ c. – shortening
2 – eggs
1 tsp. – vanilla
2 c. – all-purpose flour
1 tsp. – baking powder
1 tsp. – baking soda
½ tsp. – salt
2 c. – apples, pared & chopped (about 4 medium)
½ c. – chopped nuts
1 T. – sugar
¼ tsp. – cinnamon, ground

Directions:
Directions:
Heat oven to 350º. Grease and flour 9 x 5 x 3 loaf pan. Mix 1 c. sugar, shortening, eggs, and vanilla. Stir in flour, baking powder, baking soda, and salt until smooth. Stir in apples and nuts. Spread in pan. Mix 1 T. sugar and the cinnamon; sprinkle over batter. Bake until wooden pick inserted in center comes our clean, 50 to 60 minutes. Immediately remove from oven; cool completely before slicing. Store tightly covered. Makes 1 loaf.
