1 c butter
1 c cooking oil (1/2 c coconut oil and 1/2 c vegetable)
1 c white sugar
1 c powdered sugar
2 eggs
1 ½ tsp vanilla
4 ¼ c flour
1 tsp salt
1 tsp baking soda
1 tsp cream of tartar

Preheat oven to 350º.

Line a baking sheet with parchment paper.

Beat first four ingredients very well with an electric mixer. Add 1 egg at a time and beat well after each. Add flour and other ingredients and mix well. Roll the dough into balls the size of a walnut and roll in white sugar. Place balls 2" apart on parchment-lined baking pan. Press lightly with the bottom of a glass dipped in sugar. Bake 10-12 minutes or until edges are just barely light brown.
