2 pk yeast
6 C All Purpose Flour
Butter

In large bowl, combine Sugar, Salt, Yeast and 2 1/4 Cups Flour

In 1 qt sauce pan, heat 2 Cups water and 1/2 Cup butter (1 stick) on low heat until very warm (120º - 130º)

With mixer at low speed, beat liquid into dry ingredients, just until blended. Increase speed to Medium, beat 2 minutes.

Beat in egg and 3/4 Cups flour. Continue beating 2 minutes, scraping bowl often.

With spoon, stir in 2 1/2 Cups Flour

On a floured surface, knead the dough until smooth, about 10 minutes, working in about 1/2 Cup flour while kneading.

Shape dough into ball and place in large, greased bowl, turning dough to grease top

Cover and let rise in warm place (80º - 85º) until doubled - about 1 1/2 hours.

Punch down dough, shape all or part of dough into rolls
Cover and let rise until double, about 45 minutes

Bake (See baking directions below) OR turn dough over, brush with salad oil, cover bowl tight and refrigerate, punching down now and then until ready to use.

About 2 1/2 hours before baking/serving, grease pan, shape rolls, place in pan, cover and let rise until double, about 1 1/2 hours. Brush with oil.

Preheat oven to 400º, Bake 15 to 20 minutes

Cut into 4 pieces per hole in muffin tin to get a clover leaf effect.
