Grandma Farrington’s Potato Salad Recipe

6 small, diced red potatoes
1 egg beaten
4 Tablespoons vinegar
1 teaspoon sugar
½ teaspoon celery seed
1/3 teaspoon salt
¼ teaspoon yellow mustard
1/8 teaspoon paprika
3 Tablespoons mayonnaise
1 small onion
2-3 stalks celery
2 small sweet pickles (or dill)
Small jar of pimentos

(You can also add 1/8 cup green pepper or radishes. Just use less celery or onions if you do)

Directions:

Boil 6 small, diced red potatoes, until tender (20-30 minutes)
Then drain when finished.

While potatoes are boiling, in a double boiler or microwave, mix the following:
1 egg beaten
4 Tablespoons vinegar
1 teaspoon sugar
½ teaspoon celery seed
1/3 teaspoon salt
¼ teaspoon yellow mustard
1/8 teaspoon paprika

Cook above mixture until thickened. Let cool, then add 3 Tablespoons mayonnaise.

Chop
1 small onion
2-3 stalks celery
2 small sweet pickles (or dill)
Small jar of pimentos

(You can also add 1/8 cup green pepper or radishes. Just use less celery or onions if you do)

Mix all ingredients while potatoes are still warm.
