2 cups of flour
2/3 cup shortening
1/3 cup ice water
Dash of sallt

Mix flour and salt in a medium bowl, then cut in the shortening until well incorporated. Add the ice water and knead together to form a ball; divide in half. Roll the dough very thin and put bottom half into an ungreased pie pan and press down into the dish. Fill the crust with desired filling, then place the top crust over the filling. Seal the top and bottom crusts together well to prevent any seepage; trim away any excess crust. Use a fork to prick a few holes in the top and brush lightly with a mixture of milk and a bit of melted butter. Your pie is now ready to bake according to the pie recipe you are using.

This is my mother's recipe, and she always made the best pies with the flakiest crust! Her secret was to always use ICE water, and knead the dough until just incorporated. Overworking the dough will create a denser crust, which you want to avoid.
