1 baked pie shell
2 tbsp butter, melted
2 c diced rhubarb
1 c sugar
1/4 c sugar
2 tbsp cornstarch
2 egg yolks beaten (or whole eggs)
1/4 c light cream (or half & half)
1/2 tsp salt

Directions:
Directions:
Mix together butter, rhubarb and sugar in saucepan. Cook slowly until tender. Add remaining ingredients. Cook until thick and put in pie shell. Add meringue to top and bake 12-15 minutes at 350º.
