1 pound browned ground beef (chuck or leaner)
1 medium chopped yellow onion
2 cans mixed vegetables (veg-all brand or similar)
1 can diced tomato
1 can chili beans
1 tsp chili powder
additional potatoes and carrots as desired
6 cups chicken broth
salt and pepper to taste

(all cans approximately 15 ounces)

Directions:
Directions:
Mix all ingredients (do not drain any of the cans), bring to a boil, then immediately reduce to simmer in a covered pot for about an hour, stirring occasionally.

After an hour, continue to simmer uncovered to allow broth to thicken as much as desired, stirring occasionally.

Broth with thicken further if refrigerated overnight and then reheated before serving.
