Holiday Cranberry Chicken Recipe

8 Boneless/skinless chicken breasts
1 tsp salt
3 tbsp butter or margarine
1 c. packed brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1 tbsp Cider Vinegar
1/3 c flour tbsp flour
1/8 tsp pepper
1-1/2 c. cranberries (fresh or frozen)
3/4 c water
1/4 tsp salt
1/4 tsp ground cloves

Directions:

Rinse chicken with cold water & pat dry with towels.

Combine in bowl: 1/3 c. flour, salt & pepper
Coat chicken with flour mixture

In large non-stick pan, melt butter over medium heat. Add chicken. Cook, turning once to brown on both sides (10 min. apprx)

Remove chicken from pan and set aside. Add: Cranberries, brown sugar and water to pan drippings. Cook over medium heat until mixture comes to full boil.

In small bowl, combine remaining four and dry ingredients.

Slowly stir into cranberry mixture. Continue cooking, stirring constantly until sauce thickens and comes to full boil.

Boil 1 minute, then reduce heat to low.

Return chicken to skillet. Cook, turning once until chicken is done & fork tender (10-15 min).

Serve Cranberry sauce over chicken
