1 c leftover mashed potatoes
1 egg
1/2 cup flour
salt (mashed potatoes are already seasoned, but add to taste)

Directions:
Directions:
Mix ingredients together and form into balls. Drop into salted boiling water. The dumplings will sink to the bottom then rise to the top. Cook about 10 minutes (water should be gently boiling). Remove from pan with slotted spoon and place in a serving boil. Top with Butter and Onion.

Saute 1/2 onion in 1/2 stick of butter until the onion is limp but not browned.

Notes from Gram: Since the recipe always depends on how many leftovers mashed potatoes you have use this a guide. The density of the mashed potato also affects the amount of flour needed. You may need a little more if the mixture is too wet. You can judge this when you roll the balls. They should hold together but not be too firm.
