Buy a cheap old cut of pork. Pork Butt or fresh Picnic Roast with the bone in is best (be careful not to get a ham). Make sure it is nice and fatty. Split it in half along the bone.

There are some great dry rub recipes for this, but I find that this recipe always comes out moist and tender and works just fine.

2 tbs. kosher salt.
4 tsp. black pepper.
2 tbs. paprika.
4 tsp. garlic powder.
4 tsp. onion powder.
2 tsp chili powder.
2 tsp. cayenne pepper.
4 tsp. cumin.
2 tsp. dry mustard powder.
2 large onions, sliced thin.
4 bay leaves.
4 sprigs of thyme.
2 heads of garlic split in half.
4 sage leaves.

Make your own Bar-B-Q sauce, or use Auntie Reagan Diamond's favorite, Stubb's Hickory Bourbon, or my favorite Sweet Baby Ray's.

Place the pork in the crockpot. Add 8 cups of chicken broth, all the ground spices, 2 large sliced onions, and (in a spice bag) 4 bay leaves, 4 sprigs of thyme, 2 heads of garlic split in half, and some sage leaves. I cook that on low for 6 - 8 hours. Then drain and save the broth - it is amazing for soup or ramen noodles.

Place the pork on a plate and using a fork in each hand, pull the meat apart.

Mix the meat with some Bar-B-Q sauce, pile it on a nice toasted bun, top it with some coleslaw, and put yourself in a nice food coma.

Traditional pulled pork has a dry rub and is smoked. This pulled pork is also delicious and is not as dry. Depending on how much you have made, you can freeze the plain pulled pork with a bit of the stock for a few months. Thaw it, heat it up slowly, add your Bar-B-Q sauce and you are good to go!

Please use or save that stock. Try it in Vietnamese Pho, a soup dish consisting of broth, rice noodles, herbs, and meat.
