1 10 or 11 oz. piecrust for a 9" pie
3 large egg whites
1 cup sugar
1/3 cup fresh lemon juice
1 tbsp. grated lemon peel
1 1/2 cup heavy cream
Dash of salt

Directions:
Directions:
Heat oven to 425º. Poke holes in pie shell and bake 8-10 minutes or until lightly brown.

In large bowl with electric mixer, beat egg whites with salt until frothy. Slowly add sugar, beating until soft peaks form. Still beating, slowly add lemon juice, then peel (mixture may deflate at this point).

In a separate bowl, still at high speed, beat cream until stiff peaks form. Fold egg white mixture gently but thoroughly into cream. Spoon filling into cooled pie shell. Freeze at least 3 hours or up to 3 days.
