12 T butter (softened)
3/4 cup granulated sugar, divided
2 1/2 tea. apple pie spice or ground cinnamon, divided
21 soft caramel candies (Kraft)
3/4 cup packed brown sugar
1 large egg
1 tea. vanilla extract
1/2 tea. salt
2 cups four
1 (3.4 oz) box instant vanilla pudding mix
1 tea. baking soda
1 large apple

Heat oven to 350º

Unwrap the caramels.

Make the sugar coating with 1/2 cup granulated sugar and 1 1/2 tea. apple pie spice or ground cinnamon.

In a large mixing bowl, blend the softened butter and sugars together until fluffy. Add the egg, vanilla and salt and mix.

Place the flour, pudding mix, baking soda and remaining 1 tea. apple pie/cinnamon in a bowl and whisk to combine. Add the flour mixture to the butter mixture and blend until fully combined.

Peel and core the apple and dice into 1/4" pieces (you'll need 1 1/2 cups of apple pieces) and add to the cookie mixture.

Scoop out 1 T of cookie dough and place 1 caramel in the center of the dough. Scoop another 1 T of cookie dough and place on top - rolling into a large ball and making sure the caramel is fully covered. Roll the cookie dough ball in the sugar mixture and place on your baking sheet. Repeat - until you have 6 cookies ready to bake (don't exceed this number as the cookies spread).

Bake for 9 minutes, rotate the baking sheet and bake for another 7-9 minutes more
Allow the cookies to cool before moving from the baking sheet. Repeat until all the dough is used.

These cookies are delish at room temperature, but you can microwave them to heat the caramel.
