Ingredients: 1/2 batch Tony's Best Pie Crust.
2 onions, cut in half and sliced thinly. 1 bell pepper (any color) seeded and diced. 4 large mushrooms, sliced. 2 cups cheddar cheese, shredded. 4 eggs, thoroughly beaten. 2 tbs. AP flour. 1 1/2 cups milk or milk and cream. 1 tsp. cayenne or hot pepper flakes. 4 tbs. soft butter to sauté the veggies in and grease the pie tin.
1 pie tin, a piece of parchment paper to use for blind baking, and a pound of dried kidney (or other large bean) beans for the blind baking.

Directions:Sauté the onions until they are soft and golden 10 minutes or so. Add the peppers and mushrooms and continue to sauté until the onions are darker and the peppers are soft, cool. Pre-heat the oven to 400º. Grease the inside of the pie tin with soft butter. Line pie tin with dough. Do not stretch it and and roll it out enough to go 1" over the edge. Crimp the edges until they are pretty (see photo of me in a cooking shirt with Tony's pie crust recipe). Prick all over with a fork. Put the parchment paper in the center and fill with dried beans. Place in the freezer for ten minutes while the oven comes up to temperature. Put the crust in the oven on the middle rack and "blind bake" for 15 - 20 minutes, until the edges start to brown. Take it out and carefully remove the parchment paper and the beans so you do not crack the crust. Save the beans in Tupperware, a mason jar (whatever). You can use them for ages. Reduce the oven heat to 375º. Put the veggies in the pie crust. Toss cheese and flour together in a bowl to coat. Mix together eggs, milk and seasoning. Add the cheese to this and pour in the crust. Bake for 40 - 50 minutes until set.
Let it stand 15 minutes or so before serving to firm up and cool down a bit. |

Notes: OK, everybody knows what is coming here (hehe). Yes, this is another of my "It's time to clean out the fridge!" recipes. Use any kind of cheese, any kind of veggie, and add leftover meat if you like. The only thing you need to be consistent about is the milk, eggs, and some kind of spices.
This makes a deep dish pie, so you can make two smaller ones, or a bunch of little ones in muffin tins. You can also line the muffin tins with puff pastry, bake for 15 minutes, fill with the mix, and bake for 30 minutes more (puff pastry takes a while).
