3 1/2 c. flour, 2 tsp. baking soda, 1 tsp. salt, 2 tsp. pumpkin pie spice, 3 c. sugar, 2 c. canned pumpkin, 1 c. cooking oil, 4 eggs, 1/2 c. finely chopped nuts (optional)

Directions:

Mix sugar, oil, eggs and pumpkin. Add dry ingredients and mix well. Pour into greased and floured loaf pans. Bake at 350 for 1 hour.
