1 1/2 dozen rolls ( use Calise brand from shoprite in southbury)
6 slices bacon
2 cups chopped onions
2 cups chopped celery
2 TBSP poultry seasoning
1 tsp ground sage
1 bunch of parsley chopped
1 TBSP salt ( taste stuffing before putting in eggs) to see if it needs more
pepper use your judgement
7 eggs
1 lb cooked ground veal (I get it at Double L market in Westport)

ROLLS - use the dry, soak and shred method ( you been thought that)

SAUTE - bacon first then the onion and celery till softened, put in parsley a bit to soften towards the end.

Mix all remaining ingredients and taste before adding in eggs.

Don't forget the veal I usually do LOL.
