Part 1:
Turkey carcass, break bones and roast for 30 minutes or so at 375º.
4 tbs. onion powder.
4 tbs. garlic powder.
4 tbs. "Bells" poultry seasoning.
4 sage leaves.
4 sprigs of fresh thyme.
3 - 4 quarts of water

Part 2:
2 large onions, chopped.
1 large onion, diced.
4 large carrots, washed (do not have to peel) sliced into rounds.
2 carrots, diced.
4 ribs of celery, diced.
Leftover turkey meat.

Part 3:
Separately, 3-4 cups of cooked Jasmine or Basmati rice.

Crack up the turkey carcass (break those big bones baby!) and any extra turkey bones you have in the freezer, roast, and place them and all the scrapings from the roasting pan (you may have to add a bit of stock or wine to get all the goodness) in a stock pot or a crock pot. Add water and spices and any leftover vegetable trimmings you have (you are making turkey stock). Heat to a boil and reduce to low. Cook all day, stirring every once in a while if using a stock pot, just go to work and leave it in a crockpot.

When you get home, turn off the stock and strain into a bowl. Pick off any meat and add to the stock. Heat some butter and oil in a skillet and sauté the diced onion, carrots, and celery until tender (yes, another mirepoix), add to the stock and heat up.

Sauté chopped and sliced onions and carrots for 15 minutes. Add to stock and cook until tender - 1 hour or so. Add turkey meat and cook until heated. Taste and season as needed.

Portion out into bowls and add as much rice as desired. Stir and let it sit 2-3 minutes to heat the rice. I do not cook the rice in the broth as any leftovers get very mushy.

This is Auntie Honey's (Auntie Carolyn Diamond) favorite soup. You can make a lot of it, freeze it without the rice, and add nice hot rice when you are ready to serve it.

You can add a lot of turkey leftovers to this soup. I often add leftover stuffing and veggies, mashed potatoes, or leftover gravy. It just adds body and flavor to the soup. Scrape in the leftover green bean casserole and see what happens!
