Ingredients: 1 cup butter softened to room temperature. ⅓ cup sugar. ⅓ cup light brown sugar, tightly packed. 1 large egg yolk, well beaten. ¾ tsp. vanilla extract or vanilla paste. 2 ¼ cup AP or pastry flour. 2 tsp. cornstarch. ½ tsp. salt. ½ cup sugar for rolling (optional) - if you can get sparkling sugar from King Arthur's it makes pretty cookies (Grammie Nancy's hint). ⅓ cup jam - Grammie Aiken used raspberry preserves with the seeds removed. Strawberry jam is also good.

Directions:Preheat oven to 375º. Prepare 1/2 sheet pans by lining with parchment paper or tin foil. Always use cool pans for these cookies or they spread out too much and the filling leaks out.
Place butter in the bowl of a stand mixer, beat until creamy. Scrape down the bowl with a spatula, add sugars, and beat. Gradually increase mixer speed to medium-high until ingredients are well-combined. Add egg yolk and vanilla and beat until well mixed, scraping sides as needed. In a separate bowl, whisk together the dry ingredients (not the rolling sugar) flour, cornstarch, and salt. With mixer on low speed, gradually add flour mixture to wet ingredients until completely combined. This dough will seem very dry and crumbly, so be sure to scrape the sides and bottom of the bowl. You can use your hands to finish working the dough together.
Scoop cookie dough into 1 Tbs.-sized balls (small ice cream scoop or large melon baller) and roll very well (so that the dough is round and there are no cracks/seams in the cookie dough -- this will help keep your thumbprints from cracking). Roll in granulated sugar (if using) and place on a paper plate. Use your thumb to gently press an indent in the center of the cookie dough. Repeat until all of the dough has been used. Important! Do not skip - Transfer cookies to freezer for 30 minutes.
Place your jam in a small microwave-safe bowl. Heat briefly (about 5-10 seconds) or until jam is not hot but is no longer firm and is easy to stir. Place the chilled cookies on prepared sheet pan. Spoon jam into each thumbprint, completely filling each indent. Bake for 11 minutes or until edges are just beginning to turn golden brown. |

Notes: Grammie Aiken was Great Great Grammie Kitty Milley's mom (who was Grammie Judy's mom, who was Grammie Nancy's mom), Wow! These cookies were a favorite of Grammie Judy's second husband, Joseph "Papa Joe" Wine.

In the first photograph are Grammie Aiken with Mark Diamond and Carolyn Diamond. Grammie Aiken's second husband was John W. Aiken who ran for President of The United States in 1936, the same year Great Grammie Judy was born. Great Great Grammie Kitty told me she used to campaign for him by standing on a box in the Boston Commons and speaking to passers by.
