Ingredients: 4 to 5 lb. pork shoulder - the cheaper and more fatty the cut, the better. 10 carrots, peeled and cut into large chunks. 2 quarts ham or chicken stock (Better than Bullion has ham stock concentrate). 1 head green cabbage, cut in 8 wedges, core removed. 8 or more potatoes, quartered. This is a good area to stretch the recipe. 4 to 5 onions, peeled and roughly chopped. 1 turnip, peeled, and cut into chunks (optional, but good). 3 - 4 bay leaves. 10 peppercorns. 1 tbs. allspice. 1 tbs. mustard seeds or ground mustard powder. 10 whole cloves. 1 tbs. coriander seeds. 10 sprigs or so of fresh thyme.
Place all of the spices in a tea strainer, wrap them in cheesecloth, or use a muslin spice bag, and tie to make a "bouquet garni".

Directions:Rinse the pork shoulder with cold water and pat dry (yes here I go again, please, always dry your meat before you sear it. Otherwise it just steams and is rubbery). Place the shoulder in a large Dutch oven and sear each side until lightly brown. Remove the meat and add 1 cup stock and scrape the heck out of the bottom to get all of the good stuff up. Add the meat back to the Dutch oven or place it in a crock pot, add the liquid from the searing pot and and cover the meat with the stock. Make a bouquet garni by wrapping cheesecloth around the bay leaves, peppercorns, allspice, mustard seeds, cloves, coriander seeds, and fresh thyme. You could also just put these in a spice bag. Add the onions to the pot. Bring the liquid up to a boil, then reduce the heat and simmer for 2 - 4 hours or until the pork is fork-tender (5 hours in a crock pot). Add the carrots, cabbage, potatoes, and turnip to the pot. Add more water or stock if needed to cover everything. Increase the heat and bring the pot to a boil. Reduce heat and continue to simmer for 1 hour (3 hours in a crock pot) or until the vegetables are tender.
Remove the bouquet garni and serve with a nice crusty bread. You can reduce the liquid into a gravy or save it for the leftovers and make a split pea or ham soup using this as the stock (best idea). |

Notes: Great Great Grammie Kitty (Florence Leach-Milley, wife of Walter Reginald Milley) is Great Grammie Judy's mother. According to Great, Great, Great Grammie Florence Mascia Leach-Aiken (her mother), she got the name Kitty when she was born and the midwife said that she was "As cute as a kitten". I lived with Kitty for quite a while as a young person. Like so many old-time New England cooks, that poor woman had no idea how to use spices, so this dish is a bit modified from her original.
