1/2 lbs elbow macaroni
3 Tbs. butter
3 Tbs. flour
1 Tbs. powdered mustard
3 c. milk
1/2 c. yellow onion (chopped fine)
1 bay leaf
1 large egg
1/2 tsp. paprika
1/2 tsp. dry mustard
1/2 tsp. pepper
12 oz. shredded sharp cheddar

Topping
1 pkg. crushed Ritz crackers
3 Tbs. butter
1 cup Panko breadcrumbs

Directions:
Directions:
In a large pot of boiling salted water , cook pasta till Alden te.

While pasta is cooking , in separate pot, melt butter.
Whisk in the flour, mustard and keep moving for about 5 minutes. Make sure it’s free of lumps.

Stir in milk,onions, bay leaf and paprika.

Simmer for 10 minutes and remove bay leaf.

Temper in the egg. Stir in 3/4 of cheese. Season with salt and pepper.

Fold the macaroni into the mix then put into a 2 qt. Casserole dish. Top with remaining cheese.

Melt butter in saucepan and Toss bread crumbs to coat. Top macaroni and cheese with crumbs.

Bake 30 minutes and rest 5 minutes.
