1/2 c. butter
10 eggs
8-12 oz. canned green chilis, 4oz. o.k.
4c. grated jack cheese
1/2 c. flour
1 tsp. baking powder
2 c. cottage cheese
dash of salt

Directions:
Directions:
1. Melt butter in 9 X 13 pan, set aside.
2. Beat eggs, add flour, baking powder, salt, add chillis and cheese. Mix and pour into pan.
3. Bake uncovered 350 degrees 45-60 minutes. (325 if glass pan)
4. Can be frozen. To reheat, cover with foil.

This was the casserole Grammy Di made every Christmas that I remember celebrating on Adobe Court. I have a copy of this recipe in her handwriting and it is so special to me. Craig loves sausage, so we usually add ground breakfast sausage or Italian sausage. I think Grammy Di would be o.k. with the modification. She just wanted her children to be happy and Craig is happy when I serve this with sausage pre-cooked and added into the casserole before it bakes.
