- 7 oz almond paste
- 1/2 cup granulated sugar
- 2 egg whites
- 1/4 cup all-purpose flour
- Tiny pinch of salt
- 1/2 tsp almond extract
- Pine nuts for rolling

1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
2. In a food processor, combine almond paste, sugar, and process until it resembles sand.
3. Add egg whites, flour, salt, and almond extract. Process until the dough is sticky.
4. Use a small ice cream scoop to form the dough into balls.
5. Roll each ball in pine nuts to coat.
6. Place the cookies on the prepared baking sheet.
7. Bake for 15-18 minutes or until golden on the edges and pale in the center.
8. Let cool completely on the baking sheet.

- Use high-quality almond paste for the best flavor.
- Don't overmix the dough, or the cookies will be tough.
