Ingredients: 1 3/4 cups all-purpose flour 1/2 tsp salt 1 tsp baking soda 1/2 cup butter, softened 1/2 cup white sugar 1/2 cup peanut butter 1/2 cup packed brown sugar 1 egg, beaten 1 tsp vanilla extract 2 Tbs milk 36 miniature chocolate covered peanut butter cups- unwrapped

Directions:Preheat oven to 375º. Sift together flour, salt and baking soda; set aside. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in egg, vanilla and milk. Add the flour mixture; mix well. Shape into 36 balls and place each in an ungreased mini muffin pan. Bake at 375 for about 8 minutes. Remove from the oven and immediately place a mini peanut butter cup in the middle of each one. Cool and carefully remove from the pan. |

Notes: Another favorite of TJ's and the other peanut butter lovers in the family. Always popular when I used to bring them into work.
Tips: Freeze the peanut cups ahead of time - easier to unwrap and place in hot cookies. Pop trays in the fridge to cool before removing cookies. Can also be made using a cookie sheet.
