1 3/4 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 tsp vanilla extract
2 Tbs milk
36 miniature chocolate covered peanut butter cups- unwrapped

Directions:
Directions:
Preheat oven to 375º. Sift together flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 36 balls and place each in an ungreased mini muffin pan.
Bake at 375 for about 8 minutes. Remove from the oven and immediately place a mini peanut butter cup in the middle of each one. Cool and carefully remove from the pan.

Another favorite of TJ's and the other peanut butter lovers in the family. Always popular when I used to bring them into work.

Tips: Freeze the peanut cups ahead of time - easier to unwrap and place in hot cookies. Pop trays in the fridge to cool before removing cookies. Can also be made using a cookie sheet.
