1 fresh whole roasting chicken
1 medium yellow onion
2 carrots, unpeeled and halved
2 celery stalks, halved
6 sprigs green parsley
5 sprigs fresh thyme
6 sprigs fresh dill
½ head garlic, unpeeled cut in half
¾ teaspoon kosher salt
¾ teaspoon whole black peppercorns

Chow Mein Sauce
¼ small yellow onion, diced small
1 ½ cups shredded carrots
1 can water chestnuts, drained
4 celery stalks, diced
2 cans bean sprouts, drained
¼ cup soy sauce

Broth:
Cut up chicken and place in large pot. Add all ingredients listed under broth, cover with water. Bring to boil and simmer uncovered for 2 hours (see note for optional version). Remove chicken and set aside. Strain broth into another pot and throw out all the rest.

Sauce:
Cut up chicken and put in broth on medium heat. Add all vegies listed under sauce. When vegies are softened stir in soy sauce. Mix ⅓ cup cornstarch with ⅓ cup water and slowly add to pot. Boil to thicken. Freezes well.

Jenny made this other version to avoid all the fussing with the chicken and aromatics in mom's original recipe. Saves a couple hours! This is also excellent!

If you don't want to do the raw chicken and aromatics, you can substitute everything under broth as follows:

Start with 1 large box chicken broth and one rotisserie chicken (skinned and diced) and put in large pot. Follow all the directions starting under sauce.
