9 c flour
4 tbsp brown sugar
2 tsp salt
2 c shortening, chilled and cubed
2 c butter, chilled and cubed
1 1/2 c cold water

Filling:
2 c brown sugar
2 c corn syrup
1 c melted butter
4 eggs
4 tsp vanilla extract
1 tsp salt

Pastry:
1. Cut the cold butter and shortening into the flour, sugar and salt until shortening and butter are reduced to pea size pieces - can use food processor as well. 2. Sprinkle the water over the surface and toss with fork until water is incorporated into the dough (*do NOT overwork*) 3. Form dough into 4 rounds about an inch thick & wrap with plastic wrap to rest in fridge 30 minutes. 4. Roll out dough on lightly floured surface and cut into 5 in circles. Form into muffin tin. 5. Chill in freezer while making filling- up to 15 minutes.

Filling:
1. Combine all ingredients, mix well. 2. Fill pastry cups about 2/3rds of the way full with mixture. 3. Bake 12-15 minutes or until syrup turns a golden color. 4. Cool completely on wire rack and remove from muffin tins. 5. Store in airtight container.

Can freeze for up to 3 months - just set out overnight and enjoy!
