2 cups self-rising flour

2 large eggs

6 tablespoons lightly packed brown sugar

4–6 tablespoons cream soda (add gradually until dough forms)

2 tablespoons melted butter

½–1 cup mint chocolate chips (depending on how chocolatey you want them)

Preheat oven to 350°F (175°C) and lightly grease or line a baking sheet with parchment paper.

In a large mixing bowl, beat the eggs lightly.

Add brown sugar and melted butter, mixing until combined.

Stir in the self-rising flour.

Gradually add cream soda, a tablespoon at a time, until a soft cookie dough forms — it should hold its shape when scooped, not runny.

Fold in the mint chocolate chips.

Scoop dough onto the baking sheet (about 1–2 tablespoons per cookie).

Bake for 10–12 minutes, or until the tops are set and edges are just beginning to turn golden.

Let cool for a few minutes before transferring to a rack.

Enjoy warm or cooled — soft, sweet, and lightly minty!

For a sweeter cookie, you can add up to 8 tablespoons brown sugar.

For a richer flavor, swap half the cream soda for vanilla cream soda or add ½ teaspoon vanilla extract.
