1 cup (2 sticks) butter
1 cup sugar
1 cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup vegetable oil
1 cup regular rolled oats
1 cup crushed cornflakes
1/2 cup shredded coconut
1/2 cup finely chopped walnuts or pecans
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt

Preheat oven to 325. Cream butter and sugar til fluffy. Add egg and vanilla and beat in oil til smooth. Stir in oats, cornflakes, coconut and nuts. In another bowl, mix together flour, baking soda and salt. Add to cookie dough and mix well. Scoop up with melon scoop or teaspoon and put on cookie sheet. Flatten each slightly with a fork and bake til lightly browned. Let them cool for a couple of minutes before removing from pan.
