1¼ c. all-purpose flour
¼ c. sugar
½ tsp salt
1 tsp baking powder
½ c. butter, cold and diced, right out of the frig
2 egg yolks
2 tsp milk
¼ tsp pure Vanilla extract
4 medium (1) apples (2), peeled, cored and sliced

Streusel:
3/4 c. sugar or vanilla sugar
2 tbl. flour
½ tsp. cinnamon
2 tbl. butter, cubed

KUCHEN (Cake): Preheat oven to 325º. In a mixing bowl, combine the flour, sugar, salt, baking powder and butter. Blend with a pastry cutter or your hands. In a small bowl, beat the egg yolks, then add the vanilla and milk. Add the egg mixture to the crumbled dry ingredients. Stir gently with a spoon or fork until just blended. Press the dough on the bottom and up the sides of an 8x12x2" greased, glass baking dish. (This is an old-fashioned pan size, a bit smaller than our modern 9x13", but is still available. A 9x13" can be used but the crust will be thinner, and a larger sized apple should be used so three rows of apple slices still fit on top.) Arrange the apple slices in 3 lengthwise rows on top of the crust.

STREUSEL:(3) In a separate bowl, combine the streusel ingredients and blend with a pastry cutter or your hands until the mixture resembles peas. Sprinkle over the top of the apple slices. Bake for 45-50 minutes (35-40 minutes if using a 9x13" pan), until the crust is golden brown ad the apples look nicely glazed.

(1) Size matters because you want to fit three rows of apple slices onto the top of the cake.
(2) If you prefer soft-cooked apples, use McIntosh. For a firmer apple, use Granny Smith, or your favorite pie apple. Macs and Braeburn keep their shape beautifully while also melting in your mouth.
(3) I find the streusel topping too sweet and recommend using only half the recipe, or even less! Just a light sprinkle. A little more if using a sour apple like Granny Smith.

This is the cake that is always requested by all four: Melissa, Tyler, Ben, and Ed! It is by far our favorite apple dessert, well... maybe my Apple Crisp comes in a close second. It's a quick, easy, and rustic version of common, more polished recipes. I've used all sorts of apples from the Gopher Glen Apple Farm in our area and most work quite well. But I especially like their Mutzu or Pippin apples for baking. Braeburn are good as well.
