2 Cups All Purpose Flour (sifted)
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Shortening, soft
1 Cup Granulated Sugar
1 Egg Yolk
1/2 Cup Buttermilk or Sour Milk
1/2 tsp Vanilla Extract
1 Egg white

Directions:
Directions:
Preheat oven to 375º
Sift flour, baking soda, salt.
Mix shortening, sugar, & egg yolk, until very light & fluffy.
Mix in the flour mixture alternately with the buttermilk. Then mix in the vanilla.
Beat egg white stiff & fold into the mixture.
Drop rounded tablespoon 3" apart onto greased cookie sheet. With spatula flatten until 2 inches thick. If desired sprinkle with sugar, nuts, raisins, grated lemon rine.

Bake for 20 minutes until light golden brown.
